Two bananas sat on my counter, browning a bit more each day. I didn't have enough for my banana bread recipe so I looked for another option. I found Rich and Tender Banana Cake on my favorite baking site, King Arthur Baking.
The picture on the recipe over at King Arthur showed lighter interior color and a dome. Mine came out flat and a bit darker. That could be because my bananas were extremely ripe. I'm not sure. I didn't have cake flour on hand so I made my own. You simply remove 2 tablespoons per cup of all purpose flour and replace it with 2 tablespoons of cornstarch. It was a reminder that I need to mix up a small batch of cake flour to use for future bakes.
The recipe also calls for a sour cream based glaze but my husband loves my cream cheese frosting, so I used a half batch of it to frost this cake. It honestly could have used a bit more frosting. The flavor of the cake is really good. Many banana cake recipes I've tried over the years have hints of banana flavor. This recipe delivered.
I'm always looking for small batch cake recipes to bake up because there are only 3 of us in the house now. Our two oldest kiddos live just a couple miles from us which is nice. We get to see the grandkids whenever we want.
If you're looking for a good banana snack cake, this recipe is great. I might experiment and see if I can substitute applesauce for the egg. The prices of eggs are outrageous right now, so we bakers have to do what we can.
